南京市售酱牛肉中单增李斯特菌污染调查
摘 要
为了解南京市售酱牛肉中单增李斯特菌的污染情况,2019年3~7月在南京市玄武区、鼓楼区、秦淮区中分别选取大型超市、农贸市场、零售卤菜店为采样点,共采集33份酱牛肉样品,采用PCR法进行定性检测、采用最大可能数(most probable number,MPN)法进行定量检测。在33份样品中,检出阳性样品3份,单增李斯特菌的总检出率为9.1%(3 / 33),平均污染水平为41.0 MPN/g。从采样地点看,农贸市场的的检出率(20 %)要高于零售卤菜店(5.9 %)和大型超市(0 %),零售卤菜店的平均污染水平(65.9 MPN/g)要高于农贸市场(35.8 MPN/g)和大型超市(21.4 MPN/g)。从采样区域看,秦淮区的检出率(16.7%)要高于鼓楼区(0%)和玄武区(9.1%),鼓楼区的平均污染水平(48.9 MPN/g)要高于玄武区(43.6 MPN/g)和秦淮区(30.6 MPN/g)。与国内外熟肉中单增李斯特菌污染情况相比,南京市售酱牛肉中存在着 *51今日免费论文网|www.51jrft.com +Q: @351916072

Contamination Investigation Of Listeria Monocytogenes In Sauce Beef Sold In Nanjing
ABSTRACT
To investigate contamination situation of Listeria monocytogenes in sauce beef sold in Nanjing.Supermarkets, farmers markets, Retail pickle shop were selected in Xuanwu District,Qinhuai District, Gulou District of Nanjing as sampling points on July 3, 2019, A total of 33 sauce beef samples were collected.PCR method was used for qualitative detection and MPN method for quantitative detection.3 out of 33 sauce beef samples were positive,with a total detection rate of 9.1% (3 / 33) and an average contamination level of 41.0 MPN/g.From the sampling site, the detection rate of farmers market (20 %) was higher than that of retail marinade store (5.9 %) and large supermarket (0 %), and the average contamination level of retail marinade store (65.9 MPN/g) was higher than that of farmers market (35.8 MPN/g) and large supermarket (21.4 MPN/g).From the sampling area, the detection rate of Qinhuai District (16.7%) was higher than that of Gulou District (0 %) and Xuanwu District (9.1%), and the average contamination level of Gulou District (48.9 MPN/g) was higher than that of Xuanwu District (43.6 MPN/g) and Qinhuai District (30.6 MPN/g).contamination of Listeria monocytogenes were exist in sauce beef sold in Nanjing, the relevant regulatory authorities should strengthen their supervision to prevent the occurrence of foodborne diseases caused by Listeria monocytogenes and to protect the health and safety of residents.
