摘要
盐水鸭因具有独特的风味和较高的营养价值而深受消费者的喜爱,市场不断扩大,加工工艺也不断完善。传统的盐水鸭生产工艺已经不能满足人们不断扩大的需求。现代工艺逐步地完善,对加工机理的研究也逐渐深入,包括盐水鸭独特风味的来源以及影响其保质期的各种因素等,不仅在保持原有风味的情况下,实现工艺标准化,同时大大延长货架期,满足广大消费者的需求,在加工中严格把控产品质量,保证食品安全。
本设计是班产3000只盐水鸭的生产线设计,根据地理环境、消费市场、原料供应、政策环境、经济效益等条件出发,确定了工厂厂址的选择、厂区平面布置、产品方案选择、设备选择、车间平面布置、劳动定员等。通过综合经济分析表明:该工厂每年总费用为2242.792万元,固定资产投入年收益2917.583万元。所以该工厂经过1.08年 即可收回成本。同时该设计具备可行性,可为产品工业化生产提供一定的参考。

ABSTRACT
The Water Boiled Salted Duck is popular with consumers because of its unique flavor and high nutritional value. The market is constantly expanding and the processing technology is constantly improving. The traditional Water Boiled Salted Duck production process has been unable to meet peoples expanding needs. The modern process is gradually improved, and the research on the processing mechanism is gradually deepened, including the source of the unique flavor of the Water Boiled Salted Duck and various factors that affect its shelf life, not only to maintain the original flavor, to achieve standardization of the process, but also to greatly extend the shelf In order to meet the needs of the vast number of consumers, strictly control product quality during processing and ensure food safety.
This design is a production line design of 3000 Water Boiled Salted Ducks per shift. Based on the geographical environment, consumer market, raw material supply, policy environment, economic benefits and other conditions, the choice of the factory site, the layout of the factory area, the choice of product plan, the choice of equipment, workshop layout, labor capacity, etc. Comprehensive economic analysis shows that the annual total cost of the plant is 2,242.792 thousand RMB, and the annual income from investment in fixed assets is 2,917.583 thousand RMB. So the factory can recover the cost after 1.08 years. At the same time, the design is feasible and can provide a certain reference for the industrial production of products.
