People from the beginning of the pursuit of food and clothing problems, to now more and more high requirements for food. In the process of enjoying delicious food, people tend to choose delicious, green and healthy food, so as to discard relatively inferior food, resulting in a large amount of food waste, especially in the box, large banquet and other potetstyle activities. According to data, the amount of food wasted per person in Chinas catering industry is 93 grams per meal, a waste rate of 11.7 percent. It can be seen that the amount of food waste in the hotel is very large, so the hotel should respond to the national CD action call, to save every grain of food. Waste phenomenon is not only reflected in the waste of food, but also in the process of food production will cause a large amount of waste of resources. Therefore, this paper takes Shihu Jinling Garden Hotel as an example to discuss how to reduce waste through field visits and other methods, so as to promote the longterm development of the hotel and catering industry.

如今随着人们的生活水平不断提高,人们对生活质量也有了质的提升。人们眼光挑剔也越来越高,由最先开始的温饱问题到如今追求食物的美味口感、以及营养成分。在享受美味的过程中发现不满意的地方就立马更换,直到满意为止。因此就产生食物浪费现象,餐桌上是最普遍的问题就是,人们往往为了显示自己的排场、面子就会点很多菜式,超过可以消费的最大限度,就造成大量食物浪费问题。虽然我国地大物博,但却是粮食进口的大国,国内生产的粮食数量在庞大的人口基数面前完全不够。同时在制造食物的过程中也会造成巨大的资源浪费,例如:水电的浪费,一次性餐具的浪费等等,所以酒店更应该响应号召,加强对餐饮部门的严格管理,尤其是聚会,宴会等大型活动。通过一些措施来改善浪费问题,促进酒店的餐饮业的长久繁荣发展。
一、分析酒店资源浪费情况
(一)节能节约的环境背景及意义
根据百度百科数据显示,酒店行业是一个资源浪费比较严重的行业,不仅是企业本身存在大量的浪费现象,还因为酒店是集餐饮业和住宿业为一体的性质。04年到06年,在全国范围内召开了资源节约活动,主要包括:水电、土地、能源的节约和综合利用。随着总书记习主席的“浪费之风务必狠刹”以及中共中央的“六项禁止”中的严禁滥发钱物,讲排场、比阔气,搞铺张浪费和“八项规定”中的要厉行勤俭节约,严格遵守廉洁从政有关规定,严格执行住房、车辆配备等有关工作和生活待遇的规定的批示,因此全国掀起了一场反对浪费、提倡节约的行动。 提倡节约、节能活动能够解决建设小康社会面临的环境压力和资源束缚问题,能够实现国民经济持续健康快速发展也是实现全面建成小康社会的重要举措,对落实协调科学发展观和人与自然和谐相处都有促进作用。
